Have a pot of boiling water and a bowl of ice-cold water ready.
- Prepare the Cabbage
Choose solid heads of cabbage, tear off the coarse outer leaves and cut the cabbage into coarse shreds, thin wedges or just separate the individual leaves.
Place the cabbage into the pot of boiling water and blanch for 1-2 minutes. As soon as it is blanched, drain and put the cabbage into the ice-cold water.
- Drain and Dry
Drain the bowl of cold water and pat the cabbage dry. Ideally, you want it to be as dry as possible before freezing.
- First Freeze
Lay out your portions of Chinese cabbage on a baking tray and slide them into the freezer. Freeze for approximately 6 hours until the cabbage is frozen hard.
Place the frozen bits of cabbage into freezer-safe ziplock bags and seal tightly.
Write the date of freezing on the freezer bags as well as what is inside.
Place the bags into the freezer and freeze for up to 9 months.
