Rocky road has to be one of the easiest to make treats that pleases just about everyone of all age groups. You melt chocolate, stir it all together and let it set.

But can you get ahead and batch make a few trays of rocky road. Can you freeze rocky road afterwards? And does rocky road freeze properly or not?

Rocky road can be frozen for up to 3 months. To freeze rocky road, place it into an airtight container, layer it up then wrap the container in clingfilm and foil before freezing.

How To Freeze Rocky Road

This is the method you need to follow if you have got ready-sliced bars of rocky road that you want to freeze.

  1. Prepare Container
    First, grab an airtight container that is large enough to contain all your rocky road – don’t worry, you don’t need to store them in a single layer so it can be a deep Tupperware container.
  2. Layer Up Rocky Road
    Begin placing your rocky road into the container in one layer. When you have fit in as many as you can, place a layer of greaseproof paper over the top of the first layer before moving onto the second layer.
  3. Repeat
    Continue in this fashion, layering your rocky road between greaseproof paper, before you have all your rocky road in the container.
  4. Seal
    Secure the lid, making sure it is airtight. If you’re not convinced it is completely airtight then you can wrap the container in a layer of clingfilm to help keep the air out.
  5. Freeze
    Place the container into the freezer and you’re done.

How to Freeze Rocky Road Whole

The above method works well if you have already cut the rocky road up. But what if you want to store a complete tray of rocky road for an upcoming birthday party or family picnic? Well, that’s perfectly doable too – in fact, it’s easy!

First, make your rocky road in a baking tray as you normally. When it has set, leave it in the tray and then move onto the details below for freezing it whole.

  1. Wrap Tray
    This is so simple – now that you have made your rocky road, you just need to wrap the tray in one layer of clingfilm.
  2. Wrap Again
    Once you’ve wrapped it in clingfilm, wrap it in a layer of foil. The last thing you want is air getting to your rocky road which can cause oxidation and freezer burn.
  3. Freeze
    Place it in the freezer.

When you want to serve your rocky road, allow it to thaw overnight before cutting it up into bars as you normally would.

By adding a sheet of greaseproof paper between each layer of rocky road, you will prevent them from sticking to one another making it hard to defrost one or two at a time.

First, it’s worth noting that rocky road will keep in the fridge in an airtight container for around a week. So if you only have a few pieces left that you might be better off just trying to eat it over the course of a week.

If, however, you have decided that freezing is the best approach then you can keep it in the freezer for around 3 months.

How Do You Defrost Rocky Road?

Defrosting rocky road is as simple as leaving it to the thaw overnight in the fridge. We wouldn’t advise defrosting it in the microwave or oven as you’ll have little control over the way it defrosts.

What you’ll find will happen is the outer chocolate will melt but the middle of the rocky road will remain frozen.

That’s why the slow and steady approach is the only way to go when it comes to thawing rocky road.

Can You Refreeze Rocky Road?

If you’ve accidentally defrosted a few too many rocky road or have defrosted an uncut slab but only worked through half of it then you’re probably wondering whether or not you can refreeze it?

Well, you can! If you have left it out at room temperature to soften then we would advise against it but if you can keep it cool in the fridge then you can refreeze it within 24hrs of thawing.

Does Rocky Road Freeze Well?

The good news is that rocky road freezes remarkably well. Some of the ingredients can freeze better than others – for example, biscuit freezes really well but marshmallows can lose some of their light texture.

Having said that, you’ll be hard pushed to tell the difference between freshly prepared rocky road and those which have been frozen. So give freezing rocky road a go!
