How to Freeze Nougat
To start freezing nougat, you must ensure that the nougat itself is entirely dry and cool at room temperature. From there, we can get started;
- Portion Out: First of all, we suggest cutting the nougat into individual pieces, just like you would if you were serving it to a large crowd of people.
- Wrap in Rice Paper: Wrap each of these pieces in rice paper, which you might normally do – rice paper is a traditional piece of nougat, and it can be great for the final texture.
- Wrap in Foil: After wrapping in rice paper, wrap each of the pieces in a small portion of tinfoil, ensuring that you don’t squeeze too tightly while also making sure that you’ve sealed around the nougat efficiently.
- Prepare Container: Next, prepare the airtight container you’ll use to store the nougat. Line the inside with foil or baking paper, ensuring you’ve created a fairly well-insulated inner layer.
- Store: Place the nougat portions into the airtight container. Place the lid on the container, and then label it with the date that you’ll be freezing the nougat.
- Freeze: Place the container in the freezer, where it should keep well for around twelve months.

Using rice paper as a primary layer is great, as it prevents things from getting stuck to the nougat without impacting the flavour. Using foil as a secondary layer is helpful, as it allows you to be sure that your nougat won’t succumb to freezer burn.
Line the Container
By lining your container, you’ll protect the nougat from freezer burn. When you line a container, you’re essentially creating a layer of air that acts as a barrier to trap frost and stop freezer burn in its tracks – this is a helpful way to prevent freezer burn.
Consider Icing Sugar
Icing sugar, or confectioner’s sugar, is a handy barrier between the rice paper and the foil to prevent it from becoming stuck. This is unlikely to be a problem in the short term, but when storing nougat for up to a year, it can become a little more important and handy to know.
How Long Can You Freeze Nougat?
You can freeze nougat for up to a year. After a year, the layer of frost in your freezer will likely have made its way toward the nougat and instilled some freezer burn.
The thing that holds you back, in this case, is that ice and frost will dissolve the sugar that forms most of the structure in the nougat itself.
While this won’t cause problems during the freezing process itself, it will likely lead to problems during thawing and eating the nougat, however quickly or slowly you might do it.
How Do You Defrost Nougat?
To defrost nougat, we recommend placing a few individual portions into the fridge to thaw slowly. We’d recommend this over methods because if the nougat thaws slowly like this, it’s less likely to form condensation on the outer layer.
A lack of condensation will prevent the sugar within the nougat from dissolving, leading to a lack of structure and melting quite intensely when it thaws.

The thing that you need to be concerned about when thawing and freezing nougat is the introduction of more and more liquid to the nougat itself – this will crystallize when frozen, damaging the nougat, and dissolve sugar when melted, also damaging the nougat.
If you follow the previous instructions, you should be perfectly fine with freezing, thawing, and refreezing nougat over time.

Yes, nougat does freeze well. The thing that’s in nougat’s favour here is that the texture of the nougat is extremely unlikely to change.
